To start, you’ll need the following ingredients:
– 1 medium butternut squash, peeled and diced (around 500g)
– 200g chorizo sausage, diced
– 4 bell peppers, tops cut off and seeds removed
– 1 onion, finely chopped
– 2 cloves of garlic, minced
– 1 teaspoon smoked paprika
– 1/2 teaspoon cumin
– Salt and pepper to taste
– 1 cup cooked quinoa
– 100g feta cheese, crumbled
– Fresh parsley, chopped for garnish

In terms of kitchen tools, you’ll need:

  • wooden spoon
  • baking dish

Start by preheating your oven to 375°F (190°C). In a large skillet, heat some olive oil over medium heat. Add the diced onion and garlic, cooking until softened. Next, add the diced butternut squash and chorizo, cooking until the squash is tender and the chorizo is cooked through.

Season the mixture with smoked paprika, cumin, salt, and pepper. Stir in the cooked quinoa and crumbled feta cheese, ensuring everything is well combined.

Now, take your prepared bell peppers and stuff them with the butternut squash and chorizo mixture. Place them in a baking dish and cover with foil. Bake in the preheated oven for about 25-30 minutes, or until the peppers are tender.
