Ingredients:

  • 200g firm tofu
  • 4 medium-sized bell peppers
  • 30g chili paste
  • 150g cooked quinoa
  • 50g feta cheese
  • 15g fresh parsley
  • 20ml olive oil
  • to taste

Start by preheating your oven to 180°C. Cut the tops off the bell peppers and remove the seeds and membranes from inside. In a bowl, crumble the tofu and mix it with chili paste, cooked quinoa, crumbled feta cheese, chopped fresh parsley, olive oil, salt, and pepper. Fill each bell pepper with the tofu mixture and place them in a baking dish.

Bake the stuffed peppers in the oven for about 30 minutes, or until the peppers are tender and slightly charred on the edges. Once done, remove them from the oven and let them cool for a few minutes before serving.

The total weight of the cooked dish is approximately 750g, with 4 servings. Each serving weighs around 187g. An estimate of the calorie count per serving is about 250 calories.
