As the summer comes to an end and the days start to get cooler, I find myself craving hearty and comforting dishes that still feel light and fresh. Today, I’m excited to share my recipe for Mediterranean Stuffed Peppers, a colorful and flavorful dish that combines the warmth of roasted bell peppers with the bright and zesty flavors of the Mediterranean.

To start, you’ll need the following ingredients:

  • 3 red bell peppers
  • 1 cup quinoa
  • 1 cup cherry tomatoes, halved
  • 1/2 cup kalamata olives, chopped
  • 1/2 cup crumbled feta cheese
  • 1/4 cup fresh parsley, chopped
  • 1 lemon, juiced
  • 2 tablespoons olive oil
  • Salt and pepper, to taste

For this recipe, you will need the following kitchen tools:

  • baking sheet
  • knife
  • cutting board
  • medium saucepan
  • mixing bowl

Preheat your oven to 375°F (190°C). Cut the tops off the red bell peppers and remove the seeds and membranes. Place the peppers on a baking sheet and roast in the oven for 15 minutes, until slightly softened.

While the peppers are roasting, cook the quinoa according to package instructions in a medium saucepan. Once cooked, fluff the quinoa with a fork and transfer it to a mixing bowl.

To the bowl of quinoa, add the halved cherry tomatoes, chopped kalamata olives, crumbled feta cheese, and chopped parsley. Drizzle with olive oil and lemon juice, then season with salt and pepper. Mix everything together until well combined.

Remove the peppers from the oven and carefully fill each pepper with the quinoa mixture. Return the peppers to the oven and bake for an additional 15-20 minutes, until the peppers are tender and slightly charred.

Once cooked, remove the stuffed peppers from the oven and let them cool for a few minutes before serving. These Mediterranean Stuffed Peppers are best enjoyed warm, with a sprinkle of fresh parsley on top.

The total weight of the cooked dish is approximately 900 grams, with 3 servings. Each serving weighs around 300 grams and contains approximately 300 calories.

One unique tip for this recipe is to sprinkle some breadcrumbs over the stuffed peppers before baking for a crunchy topping that adds a lovely texture contrast.
