Ingredients:

  • purple sweet potatoes (500g)
  • coconut milk (200ml)
  • fennel seeds (1 tbsp)
  • green olives (100g)
  • pistachios (50g)

Preparation:

First, peel and chop the purple sweet potatoes into small cubes. Place them in a saucepan with the coconut milk and fennel seeds. Simmer on low heat until the potatoes are tender and the coconut milk has reduced into a thick, creamy sauce.

In the meantime, pit and slice the green olives. Roughly chop the pistachios. Once the sweet potatoes are cooked, stir in the green olives and pistachios. Allow the flavors to meld together for a few minutes, then remove from heat.
