Hello, foodies! Today, I am excited to share with you my recipe for Spicy Coconut Chicken Curry. This dish always brings a sense of warmth and comfort, perfect for a cozy night in or a gathering with friends. The rich coconut and aromatic spices in this curry create a symphony of flavors that will tantalize your taste buds.

Ingredients:

  • 600g chicken breast (diced)
  • 400ml coconut milk
  • 200g tomatoes (diced)
  • 1 large onion (chopped)
  • 4 cloves of garlic (minced)
  • 2-inch piece of ginger (grated)
  • 2 green chilies (chopped)
  • 2 tbsp curry powder
  • 1 tsp turmeric powder
  • 1 tsp cumin
  • 1 tsp coriander powder
  • to taste
  • fresh cilantro for garnish

Kitchen Tools:

  • large skillet
  • wooden spoon
  • chef’s knife
  • cutting board
  • measuring spoons

To start, heat the skillet over medium heat and add a splash of oil. Once hot, add in the onions and cook until they become translucent. Next, add in the minced garlic, grated ginger, and chopped green chilies. Allow the mixture to cook for a few minutes until fragrant.

Add in the diced chicken breast and cook until it starts to brown. Sprinkle in the curry powder, turmeric, cumin, and coriander powder. Stir well to coat the chicken in the fragrant spices.

Pour in the coconut milk and diced tomatoes. Season with salt and pepper to taste. Allow the curry to simmer on low heat for about 15-20 minutes until the chicken is cooked through and the flavors have melded together.

Serve the Spicy Coconut Chicken Curry hot over a bed of steamed rice. Garnish with freshly chopped cilantro for a burst of freshness.
