  • black sesame seeds (for garnish)

  • bamboo sushi mat
  • rice paddle
  • sharp knife

To start, cook the sushi rice according to the package instructions, then mix in the rice vinegar to season it. Place a sheet of nori on the bamboo sushi mat, and spread a thin layer of rice over it. Leave a border at the top to seal the roll later. Add a line of spicy mayo down the center of the rice, then top with mango, avocado, and cucumber slices.

Next, roll the sushi tightly using the bamboo mat, moistening the edge with a bit of water to seal it shut. Use a sharp knife to slice the roll into bite-sized pieces. Drizzle with sriracha for an extra kick, and sprinkle with black sesame seeds for a pop of color.
