Flavorful Spicy Thai Coconut Curry Noodles

Today, I’m sharing a delicious recipe for Spicy Thai-style Coconut Curry Noodles!

Growing up, I always loved the bold flavors of Thai cuisine, so today I’m excited to share my take on a classic coconut curry dish with a unique twist. This recipe is perfect for a cozy night in or a casual dinner with friends.

Ingredients:

  • rice noodles (200g)
  • coconut milk (400ml)
  • red curry paste (2 tbsp)
  • chicken breast, thinly sliced (300g)
  • bell pepper, thinly sliced (1)
  • bamboo shoots (100g)
  • fish sauce (1 tbsp)
  • lime, juiced (1)
  • fresh cilantro, chopped (for garnish)

Kitchen Tools:

  • large wok
  • saucepan
  • chef’s knife
  • cutting board

To start, cook the rice noodles according to the package instructions. In a large wok over medium heat, add the coconut milk and red curry paste. Stir well until combined and simmer for 5 minutes.

Add the sliced chicken breast to the wok and cook until no longer pink. Then, add the bell pepper, bamboo shoots, and fish sauce. Let everything simmer for another 10 minutes until the flavors have melded together.

Once the noodles are cooked, drain them and add them to the wok with the curry mixture. Toss everything together until the noodles are well coated in the sauce. Squeeze fresh lime juice over the top and garnish with chopped cilantro.

The total weight of the cooked dish is approximately 1200g, with 4 servings at around 300g each. Each serving is approximately 400 calories.

For a unique twist, try adding a spoonful of peanut butter to the curry mixture for a creamy and nutty flavor.
