The combination of earthy mushrooms, vibrant spinach, and tangy feta cheese is truly a flavor explosion that you won’t want to miss.

Ingredients:

  • large portobello mushrooms (4)
  • baby spinach (200g)
  • feta cheese, crumbled (150g)
  • garlic, minced (2 cloves)
  • olive oil (30ml)
  • salt and pepper to taste

  • frying pan
  • spoon

To start, preheat your oven to 180°C (350°F). Clean the portobello mushrooms and carefully remove the stems, creating a hollow center for the stuffing. Set the mushrooms aside and chop the stems finely.

In a frying pan over medium heat, heat the olive oil and sauté the minced garlic until fragrant. Add in the chopped mushroom stems and baby spinach, cooking until the spinach is wilted. Season with salt and pepper to taste.

Remove the pan from heat and stir in the crumbled feta cheese, combining everything well. Spoon the spinach and feta mixture into each of the mushroom caps, pressing down gently to pack the filling.

Place the stuffed mushrooms on a baking tray and bake in the preheated oven for 15-20 minutes, or until the mushrooms are tender and the cheese is melted and slightly golden.

Once cooked, remove the mushrooms from the oven and let them cool slightly before serving. These savory spinach and feta stuffed mushrooms are best enjoyed warm, letting the flavors meld together beautifully.
