Today’s Unique Recipe: Saffron Pistachio Rice Pilaf

I am excited to share a special dish with you today that always brings me a sense of warmth and comfort. The combination of saffron and pistachio in this rice pilaf creates a rich and fragrant experience that is perfect for cozy nights at home or gatherings with loved ones.

Ingredients:

  • long-grain rice (200g)
  • saffron threads (1g)
  • pistachios, shelled and chopped (50g)
  • golden raisins (30g)
  • onion, finely chopped (1 medium)
  • chicken or vegetable broth (400ml)
  • olive oil (30ml)
  • salt and pepper to taste

Kitchen Tools:

  • saucepan
  • wooden spoon
  • small bowl
  • knife

To start, rinse the long-grain rice in cold water until the water runs clear, then soak it in warm water for 30 minutes. In a small bowl, steep the saffron threads in a few tablespoons of warm water to release their color and flavor.

In a saucepan over medium heat, heat the olive oil and add the chopped onion. Saute until the onion is translucent and fragrant. Drain the soaked rice and add it to the pan, stirring to coat the grains with the onion and oil mixture.

Pour in the chicken or vegetable broth and the saffron water, season with salt and pepper, and bring the mixture to a boil. Reduce the heat to low, cover the saucepan with a lid, and let the rice simmer for 15-20 minutes until all the liquid is absorbed and the rice is fluffy.

Once the rice is cooked, fluff it with a fork and gently fold in the chopped pistachios and golden raisins. Let the pilaf sit for a few minutes to allow the flavors to meld together before serving.

This Saffron Pistachio Rice Pilaf weighs approximately 700g once cooked and serves 4 people. Each serving is about 175g, with an estimated calorie count of 250 per serving.
