To start, gather the following ingredients:

  • penne pasta (250g)
  • mango, diced (1 large)
  • coconut milk (400ml)
  • curry powder (2 tbsp)
  • red chili flakes (1 tsp)
  • cilantro, chopped (a handful)
  • lime, juiced (1)
  • cashews, chopped (50g)
  • salt and pepper, to taste

For this recipe, you’ll need the following kitchen tools:

  • pot
  • skillet
  • wooden spoon
  • knife
  • cutting board

Start by cooking the penne pasta according to the package instructions. In a skillet, heat some oil over medium heat and add the diced mango. Cook until slightly caramelized, then add the coconut milk, curry powder, red chili flakes, salt, and pepper. Let the sauce simmer for a few minutes until it thickens slightly.

Once the pasta is cooked, drain it and add it to the skillet with the mango curry sauce. Stir well to coat the pasta in the sauce. Squeeze in the lime juice and toss in the chopped cilantro. Adjust the seasoning if needed.

In a separate pan, toast the chopped cashews until golden brown. Sprinkle the toasted cashews over the pasta before serving.
