Ingredients:

  • butternut squash (500g, peeled and diced)
  • couscous (250g)
  • pecans (100g, toasted and chopped)
  • dried cranberries (50g)
  • lemon (juice and zest of 1 lemon)
  • olive oil (50ml)
  • honey (2 tbsp)
  • salt and pepper to taste
