  • asparagus

  • feta cheese
  • balsamic vinegar
  • honey
  • salt and pepper

Preparation

I start by marinating the chicken thighs with balsamic vinegar, honey, salt, and pepper in a mixing bowl. While the chicken is marinating, I preheat the grill pan over medium heat. Once hot, I grill the chicken thighs until cooked through.

Next, I chop the peach, asparagus, red chili pepper, and feta cheese. I then grill the peach slices and asparagus spears until they have nice grill marks.

To assemble the dish, I plate the grilled chicken thighs with the grilled peaches and asparagus. I top everything with the chopped red chili pepper and crumbled feta cheese.
