  • butternut squash, peeled and diced
  • brussel sprouts, halved
  • apple, diced
  • farro, cooked
  • feta cheese, crumbled
  • balsamic vinegar
  • olive oil
  • <li data-ingredient="salt and pepper to taste

Preparation

To start, preheat your oven to 400°F (200°C). On a baking sheet, toss the butternut squash and brussel sprouts with olive oil, salt, and pepper. Roast them in the oven for about 20-25 minutes, until they are caramelized and tender.

In a mixing bowl, combine the roasted vegetables with the cooked farro, diced apple, and crumbled feta cheese. Drizzle balsamic vinegar and a bit more olive oil over the mixture. Gently toss everything together until well combined.
