  • 1 cup quinoa

  • 1/2 cup chopped pecans
  • 2 tbsp maple syrup

  • 1/2 tsp ground nutmeg
  • 1/2 tsp salt

Start by preheating your oven to 400°F (200°C). Cut the acorn squash in half lengthwise and scoop out the seeds. Place the squash halves cut-side down on a baking sheet and roast in the oven for about 30 minutes, or until tender.

While the squash is roasting, cook the quinoa according to the package instructions. In a saucepan, combine the cooked quinoa, dried cranberries, chopped pecans, maple syrup, cinnamon, nutmeg, and salt. Cook over medium heat, stirring occasionally, for about 5 minutes or until the mixture is heated through.

Once the squash is tender, remove them from the oven and carefully flip them over. Fill each squash half with the quinoa mixture, pressing it down gently to pack it in. Return the stuffed squash to the oven and bake for an additional 10 minutes.

Once the squash is cooked through and the filling is heated, remove from the oven and let it cool slightly before serving.
