Exploring the Flavors of Fall with my Harvest Squash Pasta

Autumn is in full swing, and I am excited to share a delicious and comforting dish that celebrates the seasonal produce. Today, I am bringing you my unique Harvest Squash Pasta recipe that combines the earthy flavors of butternut squash, sage, and nutmeg with a hint of sweetness from dried cranberries. This dish is perfect for a cozy night in or a festive dinner party with friends and family.

For this recipe, you will need the following ingredients:

  • butternut squash (500g, peeled and diced)
  • pasta of your choice (300g)
  • fresh sage leaves (10 leaves, chopped)
  • dried cranberries (50g)
  • nutmeg (1/2 tsp, freshly grated)
  • vegetable stock (500ml)
  • olive oil (2 tbsp)
  • salt and pepper to taste

To bring this dish to life, you will need the following kitchen tools:

  • chef’s knife
  • cutting board
  • large saucepan
  • wooden spoon
  • colander

Start by heating olive oil in a large saucepan over medium heat. Add the chopped sage leaves and sauté for a minute until fragrant. Then, add the diced butternut squash to the saucepan and cook until it starts to caramelize and soften, about 10 minutes.

Next, pour in the vegetable stock and bring to a simmer. Let the squash simmer until it is fork-tender, about 15-20 minutes. Use a wooden spoon to mash some of the squash pieces to create a creamy texture.

While the squash is simmering, cook the pasta according to the package instructions until al dente. Drain the pasta in a colander and set aside.

Once the squash is cooked, season the mixture with salt, pepper, and freshly grated nutmeg. Add in the cooked pasta and dried cranberries, stirring gently to combine all the ingredients.

Serve the Harvest Squash Pasta hot, garnished with an extra sprinkle of chopped sage leaves and a dash of freshly ground black pepper.

This dish weighs approximately 1200g once cooked and serves 4 people. Each serving is around 300g and contains approximately 400 calories.

One clever tip for this recipe is to reserve some of the pasta cooking water to add to the sauce if it becomes too thick. The starchy water will help to loosen the sauce and create a silky texture.
