Deliciously Savory Beef and Mushroom Stuffed Bell Peppers

Today, I’m excited to share a hearty and flavorful dish that’s perfect for a cozy Sunday dinner with loved ones. This recipe for beef and mushroom stuffed bell peppers is a comforting and satisfying option that will surely impress your guests.

Ingredients:

  • 4 large bell peppers
  • 400g ground beef
  • 200g mushrooms
  • 1 onion
  • 2 cloves of garlic
  • 1 cup cooked rice
  • 1 can of diced tomatoes
  • 1 tsp paprika
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • Grated cheese for topping

To begin, preheat your oven to 180°C. Cut the tops off the bell peppers and remove the seeds. Place them in a baking dish and set them aside.

In a skillet over medium heat, cook the ground beef until browned. Add in finely chopped mushrooms, diced onion, and minced garlic. Cook until the vegetables are softened.

Transfer the cooked beef and vegetable mixture to a mixing bowl. Add in the cooked rice, diced tomatoes, paprika, oregano, salt, and pepper. Mix everything together until well combined.

Spoon the filling into each bell pepper, pressing down gently to pack it in. Top each filled pepper with grated cheese.

Cover the baking dish with foil and bake in the preheated oven for 25-30 minutes. Remove the foil and bake for an additional 10 minutes or until the cheese is melted and bubbly.

Once done, remove the stuffed bell peppers from the oven and let them cool slightly before serving. These flavorful and savory stuffed bell peppers weigh approximately 2400g in total, serving 4 people at around 600g per portion. Each serving is approximately 450 calories.

One unique tip for this recipe is to sprinkle some crushed red pepper flakes on top before baking for an added kick of heat.
