Today’s Mood: Sweet and Healthy Cravings

Lately, I’ve been in the mood for something sweet but also healthy. I wanted to create a dessert that wouldn’t make me feel guilty after indulging in it. So, I decided to experiment in the kitchen and came up with a unique and nutritious recipe that satisfied my cravings without sacrificing flavor.

Ingredients:

  • 2 ripe bananas
  • 1 can of chickpeas (240g drained weight)
  • 3 tbsp cocoa powder
  • 2 tbsp honey
  • 1 tsp vanilla extract
  • 2 tbsp almond butter
  • 2 tbsp coconut flakes

Kitchen Tools:

  • food processor
  • mixing bowl
  • spatula
  • baking dish

I started by preheating the oven to 180°C (350°F) and lining a baking dish with parchment paper. In a food processor, I blended the ripe bananas, drained chickpeas, cocoa powder, honey, vanilla extract, and almond butter until smooth. The mixture should be thick and creamy.

Next, I transferred the mixture to a mixing bowl and folded in the coconut flakes. Then, I poured the batter into the prepared baking dish and spread it out evenly with a spatula. I popped it in the oven for 25-30 minutes, or until the edges started to pull away from the sides and the top was set.

Once the healthy dessert was ready, I let it cool completely before slicing it into squares. Each bite was a perfect combination of rich chocolate flavor from the cocoa powder, natural sweetness from the bananas and honey, and a hint of nuttiness from the almond butter. The coconut flakes added a lovely crunch to every bite.

Recipe Unique Tip:

For an extra twist, try sprinkling some sea salt on top of the dessert before baking. The salt will enhance the chocolate flavor and add a delightful contrast to the sweetness of the dish.

With a total weight of approximately 600g, this healthy dessert yields 12 servings. Each serving weighs around 50g and contains an estimated 150 calories. I encourage you to give this recipe a try and feel free to customize it with your favorite toppings or mix-ins. Enjoy!
