Today, I’m excited to share a new recipe inspired by the chilly weather outside. This Spicy Thai Pumpkin Curry is the perfect comforting dish to warm up your soul on a cold day. The combination of creamy pumpkin, spicy curry paste, and aromatic herbs creates a delicious and unique flavor experience that you won’t want to miss.

Ingredients:

  • 500g pumpkin, diced
  • 400ml coconut milk
  • 2 tbsp red curry paste
  • 2 stalks lemongrass, smashed
  • 4 kaffir lime leaves
  • 50g galangal, sliced
  • a handful of Thai basil leaves
  • 500ml vegetable broth
  • 2 tbsp fish sauce
  • 1 tbsp palm sugar
  • 1 lime, juiced

To start, heat some oil in a large pot over medium heat. Add the red curry paste and cook for a few minutes until fragrant. Then, add the diced pumpkin and stir to coat in the curry paste. Pour in the coconut milk and vegetable broth, then add the lemongrass, kaffir lime leaves, and galangal. Bring the mixture to a boil, then reduce heat and let it simmer for about 20 minutes until the pumpkin is tender.

Once the pumpkin is cooked through, season the curry with fish sauce, palm sugar, and lime juice. Allow the flavors to meld together for another few minutes before stirring in the Thai basil leaves. Remove the lemongrass, kaffir lime leaves, and galangal slices before serving.

This Spicy Thai Pumpkin Curry is perfect served over steamed rice or noodles, garnished with extra Thai basil leaves and a wedge of lime.
