That’s why I’m excited to share my recipe for a Caramelized Onion and Blue Cheese Tart today. This savory tart combines the rich, sweet flavor of caramelized onions with the tangy bite of blue cheese, all nestled in a buttery, flaky pastry crust. It’s the perfect dish to enjoy on a chilly evening with a glass of red wine.

Ingredients:

  • store-bought puff pastry (2 sheets)
  • red onions (3, thinly sliced)
  • blue cheese (150g, crumbled)
  • fresh thyme (2 tbsp, chopped)
  • balsamic vinegar (2 tbsp)
  • olive oil (2 tbsp)
  • salt and pepper to taste

To start, preheat your oven to 200°C. Roll out the puff pastry sheets on a floured surface, then transfer them to a baking sheet lined with parchment paper. Use a knife to score a border around each sheet, about 1 inch from the edge, then prick the inner area with a fork to prevent it from puffing up too much while baking.

In a skillet, heat the olive oil over medium heat. Add the sliced onions and cook, stirring occasionally, until they are soft and caramelized, about 20-25 minutes. Add the balsamic vinegar, salt, and pepper, then continue cooking for another 5 minutes to let the flavors meld together.

Spread the caramelized onions evenly over the puff pastry sheets, staying within the borders you scored. Sprinkle the crumbled blue cheese and fresh thyme over the top. Brush the edges of the pastry with a little olive oil to help them brown in the oven.
