Ingredients:

  • Arborio rice (250g)
  • Chicken or vegetable broth (1 liter)
  • Fresh strawberries (200g, diced)
  • Fresh basil (1 bunch, chopped)
  • Shallots (2, finely chopped)
  • Butter (50g)
  • White wine (125ml)
  • Parmesan cheese (50g, grated)
  • Salt and pepper to taste

To start, heat the chicken or vegetable broth in a saucepan over low heat. In another saucepan, melt the butter and sauté the shallots until they are translucent. Add the Arborio rice to the shallots and stir well to coat the grains with the butter.

Pour in the white wine and cook until it is absorbed by the rice. Begin adding the warm broth, one ladle at a time, stirring constantly until each addition is absorbed before adding more. Repeat this process until the rice is cooked al dente, about 18-20 minutes.

Once the risotto is creamy and the rice is cooked to your liking, gently fold in the diced strawberries and chopped basil. Season with salt and pepper to taste. Remove the risotto from the heat and stir in the grated Parmesan cheese until melted and well combined.

Serving:

The cooked dish weighs approximately 1200g and yields 4 servings, each serving weighing around 300g. One serving of this strawberry basil risotto is approximately 350 calories.
