This Blueberry Coconut Crumble combines the tartness of fresh blueberries with the tropical flavor of coconut, all topped with a crunchy oat crumble. It’s a delightful treat that will surely impress your family and friends.

Ingredients:

  • 300g fresh blueberries
  • 100g shredded coconut
  • 150g oats
  • 100g brown sugar
  • 150g cold butter, cubed
  • 50g all-purpose flour
  • 1 lemon, zest and juice

Start by preheating your oven to 350°F (180°C). In a mixing bowl, combine the fresh blueberries with the shredded coconut and lemon zest and juice. Toss everything together gently, ensuring the blueberries are well coated.

In a separate bowl, mix together the oats, brown sugar, cubed cold butter, and all-purpose flour. Using your fingertips, rub the butter into the dry ingredients until you have a crumbly mixture.

Pour the blueberry and coconut mixture into a greased baking dish. Sprinkle the oat crumble over the top, covering the blueberries evenly.

Bake in the preheated oven for 30-35 minutes, or until the crumble topping is golden brown and the blueberries are bubbling.
