I’m excited to share this unique dessert recipe with you today, perfect for those warm summer nights when you’re craving something sweet yet refreshing. This Blueberry Coconut Crumble combines the tartness of fresh blueberries with the tropical flavor of coconut, all topped with a crunchy oat crumble. It’s a delightful treat that will surely impress your family and friends.

Ingredients:

  • 300g fresh blueberries
  • 100g shredded coconut
  • 150g oats
  • 100g brown sugar
  • 150g cold butter, cubed
  • 50g all-purpose flour
  • 1 lemon, zest and juice

Start by preheating your oven to 350°F (180°C). In a mixing bowl, combine the fresh blueberries with the shredded coconut and lemon zest and juice. Toss everything together gently, ensuring the blueberries are well coated.

In a separate bowl, mix together the oats, brown sugar, cubed cold butter, and all-purpose flour. Using your fingertips, rub the butter into the dry ingredients until you have a crumbly mixture.

Pour the blueberry and coconut mixture into a greased baking dish. Sprinkle the oat crumble over the top, covering the blueberries evenly.

Bake in the preheated oven for 30-35 minutes, or until the crumble topping is golden brown and the blueberries are bubbling.

Once baked, let the Blueberry Coconut Crumble cool slightly before serving. This dessert is best enjoyed warm, topped with a scoop of vanilla ice cream or a dollop of whipped cream.
