Autumn Comfort Food: Pumpkin Sage Risotto

Today, I’m excited to share a cozy dish that embodies all the flavors of autumn – my Pumpkin Sage Risotto. This creamy and savory dish is perfect for a chilly evening when you’re craving something warm and comforting.

For this recipe, you will need the following ingredients:

  • arborio rice (300g)
  • pumpkin puree (250g)
  • white wine (150ml)
  • vegetable broth (1 liter)
  • onion (1, finely chopped)
  • garlic cloves (2, minced)
  • fresh sage leaves (10, chopped)
  • parmesan cheese (100g, grated)
  • butter (50g)
  • salt and pepper to taste

To make this Pumpkin Sage Risotto, you will need the following kitchen tools:

  • saucepan
  • wooden spoon
  • ladle
  • grater
  • knife

Start by heating the vegetable broth in a saucepan and keeping it warm over low heat. In another saucepan, melt the butter over medium heat. Add the chopped onion and minced garlic, cooking until soft and translucent. Stir in the arborio rice, toasting it for a few minutes until it becomes slightly translucent.

Next, pour in the white wine, stirring constantly until it is absorbed by the rice. Begin adding the warm vegetable broth, one ladleful at a time, stirring constantly and allowing each addition to be absorbed before adding more. Continue this process until the rice is creamy and cooked al dente, about 18-20 minutes.

Once the risotto reaches a creamy consistency, stir in the pumpkin puree and fresh sage leaves. Cook for an additional 2-3 minutes, allowing the flavors to meld together. Remove the risotto from the heat and stir in the grated parmesan cheese. Season with salt and pepper to taste.

To serve, ladle the Pumpkin Sage Risotto into bowls and garnish with additional sage leaves and a sprinkle of parmesan cheese. This dish serves 4 and each serving weighs approximately 350g. One serving of this Pumpkin Sage Risotto is around 400 calories.
