I’m excited to share this delicious recipe for Autumn Harvest Risotto with you today. As the leaves start to change and a chill sets in the air, there’s nothing better than a warm, comforting bowl of risotto packed with the flavors of the season.

For this recipe, I’ve combined earthy wild mushrooms, sweet butternut squash, and nutty Parmesan cheese to create a rich and flavorful dish that is perfect for a cozy night in.

Ingredients:

  • Arborio rice (300g)
  • Butternut squash, cubed (300g)
  • Mixed wild mushrooms, sliced (200g)
  • Shallots, minced (2)
  • Garlic, minced (3 cloves)
  • Dry white wine (120ml)
  • Vegetable broth (1 liter)
  • Parmesan cheese, grated (100g)
  • Fresh thyme leaves
  • Salt and pepper to taste
  • Olive oil

  • Cutting board
  • Large saucepan
  • Wooden spoon
  • Grater

Start by heating some olive oil in a large saucepan over medium heat. Add the minced shallots and garlic, and sauté until fragrant. Next, add the Arborio rice and cook for a few minutes until the grains are translucent.

Deglaze the pan with the white wine, stirring until the liquid is absorbed. Gradually add the vegetable broth, a ladleful at a time, stirring constantly and allowing each addition to be absorbed before adding more.

In a separate pan, sauté the butternut squash and mushrooms until tender. Add them to the risotto along with the fresh thyme leaves. Continue to cook the risotto until the rice is creamy and cooked through.

Remove the risotto from the heat and stir in the grated Parmesan cheese. Season with salt and pepper to taste.

This Autumn Harvest Risotto is best served hot, garnished with extra Parmesan cheese and a sprinkle of fresh thyme leaves.
