As the weather starts to cool and fall approaches, I find myself craving warm and comforting desserts that remind me of cozy evenings spent by the fireplace. That’s why I’m excited to share my recipe for Chai Spiced Bread Pudding with you today. This dessert is a delicious twist on a classic favorite, infused with the aromatic flavors of chai tea.

I start by gathering all my ingredients: 300g of stale bread cubes, 500ml of whole milk, 4 chai tea bags, 100g of brown sugar, 2 eggs, 1 tsp of vanilla extract, 1/2 tsp of ground cinnamon, 1/4 tsp of ground ginger, 1/4 tsp of ground cardamom, a pinch of ground cloves, and a handful of raisins.

For this recipe, you will need the following kitchen tools:

  • oven-proof dish

To start, I heat the milk in a saucepan until it is steaming but not boiling. I then add the chai tea bags and let them steep for 10 minutes to infuse the milk with the warm spices. Once the milk is infused, I remove the tea bags and stir in the brown sugar until it is fully dissolved.

In a separate mixing bowl, I whisk together the eggs, vanilla extract, cinnamon, ginger, cardamom, and cloves. I slowly pour the warm chai-infused milk into the egg mixture, whisking constantly to prevent the eggs from curdling.

Next, I place the stale bread cubes in an oven-proof dish and sprinkle the raisins on top. I pour the chai-spiced custard mixture over the bread, making sure to press down on the bread cubes to ensure they soak up the liquid.

I preheat the oven to 350°F (180°C) and bake the bread pudding for 35-40 minutes, or until the custard is set and the top is golden brown. The kitchen fills with the delightful aroma of warm spices as the bread pudding bakes.

Once the bread pudding is done, I remove it from the oven and let it cool slightly before serving. This dessert is best enjoyed warm, with a dollop of freshly whipped cream or a scoop of vanilla ice cream.

This Chai Spiced Bread Pudding weighs approximately 1200g after cooking and serves 8. Each serving is about 150g and contains approximately 300 calories.

A unique tip for this recipe is to sprinkle some chopped pistachios on top of the bread pudding before serving for an added crunch and burst of color. It adds a delightful contrast to the rich, creamy dessert.
