A Unique Dessert: Spiced Carrot Cake Cookies

Today, I’m excited to share with you a recipe for Spiced Carrot Cake Cookies. As the holiday season approaches, I find myself craving all things warm and comforting. These cookies are a unique twist on the classic carrot cake, perfect for indulging in a cozy evening at home or sharing with friends and family.

Ingredients:

  • 200g carrots, grated
  • 150g all-purpose flour
  • 100g brown sugar
  • 100g unsalted butter, softened
  • 50g walnuts, chopped
  • 50g raisins
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp salt

To start, preheat your oven to 350°F (180°C) and line a baking sheet with parchment paper. In a mixing bowl, combine the softened butter and brown sugar, whisking until creamy. Add in the grated carrots, chopped walnuts, and raisins, mixing well to distribute the ingredients evenly.

Next, sift in the flour, ground cinnamon, ground nutmeg, and salt. Use a spatula to gently fold the dry ingredients into the wet mixture, being careful not to overmix. The dough should come together to form a sticky consistency.

Scoop spoonfuls of the dough onto the prepared baking sheet, spacing them apart to allow for spreading. Flatten each cookie slightly with the back of a spoon. Place the baking sheet in the preheated oven and bake for 12-15 minutes, or until the edges are golden brown.

Once baked, remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. These Spiced Carrot Cake Cookies are best enjoyed fresh out of the oven, with a cup of hot tea or coffee.

The approximate total weight of the cooked dish is 650g, yielding around 12 cookies. Each serving weighs approximately 54g, with an estimated calorie count of 180 per cookie.

Tip:

For an extra indulgent treat, try sandwiching a scoop of vanilla ice cream between two cookies to make a delicious ice cream sandwich.
