This dish always warms me up and brings a smile to my face with its perfect blend of flavors. It’s the ultimate comfort food for dreary days or when you’re just craving something deliciously indulgent.

For this recipe, you’ll need:

  • 400g shrimp, peeled and deveined
  • 1 can (400ml) coconut milk
  • 3 tablespoons red curry paste
  • 1 red bell pepper, sliced
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 lime, juiced
  • Fresh cilantro, for garnish
  • Salt and pepper, to taste

Start by heating a skillet over medium heat and adding a splash of oil. Sauté the diced onion, minced garlic, and grated ginger until fragrant. Add the red curry paste and cook for another minute to release its flavors.

Next, pour in the coconut milk and stir until the curry paste is fully incorporated. Allow the mixture to simmer for a few minutes to thicken slightly. Season with salt and pepper to taste.

Add the sliced bell pepper to the skillet and let it cook until slightly softened. Then, gently stir in the shrimp and cook until they turn pink and opaque. Squeeze in the lime juice for a burst of freshness.

Once the shrimp are cooked through, remove the skillet from heat. Serve the spicy coconut shrimp curry over steamed rice and garnish with fresh cilantro.
