Ingredients:

  • 200g Arborio rice
  • 150g pumpkin puree
  • 750ml vegetable broth
  • 1 medium onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 2 tbsp butter
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

Next, ladle in a small amount of the warm vegetable broth into the rice mixture and stir continuously until the liquid is absorbed. Continue adding the broth one ladle at a time, stirring frequently, until the rice is creamy and al dente. This process should take about 20 minutes.
