Crispy Chickpea Chocolate Mousse

Today, I’m excited to share a unique and healthier dessert recipe that combines the crunch of roasted chickpeas with the creamy indulgence of chocolate mousse. This dish is perfect for those days when you’re craving something sweet but still want to stay on track with your health goals.

Ingredients:

  • 1 can of canned chickpeas (drained) – 400g
  • 3 tablespoons of cocoa powder – 30g
  • 4 tablespoons of maple syrup – 60ml
  • 2 tablespoons of coconut oil (melted) – 30ml
  • 1 teaspoon of vanilla extract
  • A pinch of sea salt

Kitchen Tools:

  • food processor
  • baking sheet
  • mixing bowl

To start, preheat your oven to 400°F (200°C). Rinse the canned chickpeas and pat them dry with a paper towel. Spread them out on a baking sheet and roast in the oven for about 20-25 minutes until they are crispy.

Once the chickpeas are done, let them cool slightly. In a food processor, blend the chickpeas until they form a fine powder. Add in the cocoa powder, maple syrup, melted coconut oil, vanilla extract, and a pinch of sea salt. Blend everything until smooth and creamy.

Scoop the chocolate mousse into individual serving glasses or bowls and chill in the refrigerator for at least 1 hour to set. Before serving, you can top the mousse with additional roasted chickpeas for a crunchy garnish.

This Crispy Chickpea Chocolate Mousse weighs approximately 700g after preparation. It serves 4 people, with each serving weighing around 175g. One serving of this dessert is estimated to be around 250 calories.

My tip for an extra special touch to this dessert is to sprinkle some flaky sea salt on top just before serving. The combination of salty and sweet flavors will take this mousse to the next level.
