This Cinnamon Sweet Potato Pudding is perfect for those looking to satisfy their sweet tooth in a nutritious way. The warm and comforting flavors of cinnamon and sweet potato come together beautifully in this creamy and indulgent treat.

Ingredients:

  • 1 large sweet potato (about 300g)
  • 1 can of coconut milk (400ml)
  • 3 tablespoons of maple syrup
  • 1 teaspoon of cinnamon
  • 1 teaspoon of vanilla extract
  • 2 tablespoons of chia seeds

Kitchen Tools:

  • baking sheet
  • food processor
  • saucepan
  • whisk

To start, preheat your oven to 400°F (200°C). Pierce the sweet potato all over with a fork and place it on a baking sheet. Roast in the oven for about 45-50 minutes, or until the flesh is soft. Remove from the oven and let it cool slightly before peeling off the skin.

In a food processor, blend the cooked sweet potato until smooth. In a saucepan, combine the sweet potato puree, coconut milk, maple syrup, cinnamon, and vanilla extract. Cook over medium heat, stirring constantly until the mixture is heated through.

Once the pudding is warm, remove from heat and stir in the chia seeds. Let the pudding sit for about 10 minutes to allow the chia seeds to thicken the mixture.

Divide the pudding into serving dishes and refrigerate for at least 2 hours, or until chilled and set.
