Ingredients:

  • 500ml heavy cream
  • 250ml milk
  • 10g gelatin powder
  • 2 tbsp dried lavender buds
  • 100g honey
  • 100g sugar

Kitchen Tools:

  • fine mesh strainer
  • ramekins

To start, pour the heavy cream and milk into a saucepan over medium heat. Add the dried lavender buds and honey, stirring gently to combine. Let the mixture simmer for about 10 minutes to infuse the flavors of the lavender and honey.

While the cream mixture is simmering, sprinkle the gelatin powder over a small amount of water in a separate bowl and let it bloom for a few minutes. Once bloomed, add the gelatin mixture to the warm cream mixture and stir until fully dissolved. Remove the saucepan from heat and strain the mixture through a fine mesh strainer to remove the lavender buds.

Divide the panna cotta mixture evenly among ramekins and refrigerate for at least 4 hours, or until set.

When ready to serve, run a knife around the edge of each ramekin and invert the panna cotta onto a plate. Drizzle with additional honey and sprinkle with sugar for a beautiful presentation.
