Mushroom Risotto with Truffle Oil

Today, I’m excited to share my recipe for a decadent Mushroom Risotto with Truffle Oil. This dish is perfect for a cozy night in or a special celebration, bringing together earthy mushrooms and luxurious truffle oil for a truly indulgent experience.

Ingredients:

  • Arborio rice (300g)
  • Mushrooms, sliced (200g)
  • Onion, finely chopped (1 medium)
  • Garlic, minced (2 cloves)
  • Vegetable broth (1 liter)
  • Parmesan cheese, grated (50g)
  • Truffle oil (2 tbsp)
  • Butter (2 tbsp)
  • Salt and pepper to taste

Kitchen Tools:

  • Saucepan
  • Wooden spoon
  • Chef’s knife
  • Grater

To start, heat the vegetable broth in a saucepan over medium heat until it simmers. In another saucepan, melt the butter and sauté the onions until they are translucent. Add the garlic and Arborio rice, stirring to coat the rice in the butter.

Next, add a ladleful of hot broth to the rice mixture and cook, stirring constantly, until the liquid is absorbed. Continue adding the broth gradually, allowing the rice to absorb each addition before adding more. This process will take about 20-25 minutes, and the rice should be creamy with a slight bite to it.

While the risotto is cooking, sauté the sliced mushrooms in a separate pan until they are golden brown and tender. Season with salt and pepper to taste.

Once the risotto is cooked to your desired consistency, stir in the grated Parmesan cheese and cooked mushrooms. Remove from heat and drizzle with truffle oil, stirring gently to combine.

Serve the Mushroom Risotto with Truffle Oil hot, garnished with extra Parmesan cheese and a sprinkle of black pepper. This dish is best enjoyed immediately to savor the rich flavors.

The total weight of the cooked dish is approximately 900g, with 4 servings at 225g each. One serving is around 350 calories.

A unique tip for this recipe is to add a splash of white wine to the risotto before adding the broth for an extra layer of flavor.
