Today, I’m excited to share a recipe that always brings warmth and comfort to my kitchen—spiced banana muffins. The combination of sweet bananas and aromatic spices creates a delightful treat that is perfect for any time of day. Ingredients:

  • 3 medium ripe bananas (mashed)
  • 200g all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp salt
  • 100g brown sugar
  • 80g melted butter
  • 1 large egg
  • 1 tsp vanilla extract
  • 120ml milk

  • muffin tin
  • whisk
  • spatula

Start by preheating your oven to 350°F (180°C) and greasing a muffin tin or lining it with paper liners. In a medium mixing bowl, combine the mashed bananas, melted butter, brown sugar, egg, vanilla extract, and milk. Mix until well combined.

In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Slowly add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix the batter.

Divide the batter evenly among the muffin cups, filling each about three-quarters full. Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
