Lately, I’ve been craving something sweet but refreshing, perfect for warm spring days. Today, I’m excited to share my recipe for a Caramelized Pineapple Tart. This dessert is a delightful combination of juicy pineapple chunks coated in a rich caramel sauce, all nestled in a buttery, flaky tart crust. It’s a treat that will surprise and delight your taste buds!

Ingredients:

  • 1 fresh pineapple, peeled, cored, and cut into chunks (about 600g)
  • 100g unsalted butter
  • 150g granulated sugar
  • 1 tsp vanilla extract
  • 1/2 tsp sea salt
  • 1 pre-made tart crust (from the store or homemade)

  • tart pan

To start, melt the butter in a saucepan over medium heat. Once melted, add the sugar and stir until it dissolves and turns a rich caramel color. Be careful not to burn the caramel! Add the pineapple chunks to the caramel along with the vanilla extract and sea salt. Cook for about 5 minutes, stirring gently to coat the pineapple evenly.

While the pineapple is caramelizing, preheat your oven to 350°F (180°C). Place the tart crust in the tart pan, then pour the caramelized pineapple mixture into the crust, spreading it out evenly. Bake the tart in the preheated oven for 25-30 minutes, until the crust is golden brown.
