Today, I am thrilled to share a unique dessert recipe that is perfect for the fall season. Sweet potato custard surprise is a delightful twist on a classic custard recipe that will leave your taste buds wanting more.

Ingredients:

  • 2 medium sweet potatoes (400g)
  • 3 large eggs
  • 1 can of coconut milk (400ml)
  • 1/2 cup of maple syrup (120ml)
  • 1 teaspoon of cinnamon
  • 1/2 teaspoon of nutmeg
  • 1 teaspoon of vanilla extract
  • 1/4 teaspoon of salt

Kitchen Tools:

  • baking dish
  • mixing bowl
  • whisk
  • potato masher

To start, preheat your oven to 350°F (180°C). Peel and cube the sweet potatoes, then boil them until fork-tender. Drain and mash the sweet potatoes using a potato masher until smooth. In a mixing bowl, whisk together the eggs, coconut milk, maple syrup, cinnamon, nutmeg, vanilla extract, and salt.

Combine the mashed sweet potatoes with the egg mixture until well incorporated. Pour the mixture into a greased baking dish and bake for 45-50 minutes, or until the custard is set.

Once the sweet potato custard is done baking, allow it to cool before serving. This dessert is best enjoyed warm with a dollop of whipped cream or a sprinkle of cinnamon on top.
