For this recipe, you’ll need the following ingredients:

  • 600ml heavy cream
  • 200ml milk
  • 4 gelatin sheets
  • 100g sugar
  • 2 tbsp dried lavender flowers
  • 4 tbsp honey

Gather the following kitchen tools before you begin:

  • saucepan
  • whisk
  • fine mesh strainer
  • ramekins

To start, pour the heavy cream and milk into a saucepan and heat it over medium heat until it begins to simmer. Add in the sugar, dried lavender flowers, and honey, stirring constantly until the sugar has dissolved. Remove the saucepan from the heat and let the mixture steep for about 15 minutes to infuse the flavors.

While the mixture is steeping, place the gelatin sheets in a bowl of cold water to soften for about 5 minutes. Once softened, squeeze out any excess water from the gelatin sheets and add them to the warm cream mixture. Whisk until the gelatin is completely dissolved.

Strain the mixture through a fine mesh strainer to remove the lavender flowers, then pour it into ramekins or molds. Chill the panna cotta in the refrigerator for at least 4 hours, or until set.

When ready to serve, dip the bottoms of the ramekins in hot water for a few seconds to loosen the panna cotta. Carefully invert them onto serving plates and garnish with a drizzle of honey and a sprinkle of dried lavender flowers.
