Ingredients:

  • 600g boneless, skinless chicken thighs
  • 1 ripe mango
  • 400ml coconut milk
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1-inch piece of ginger, grated
  • 2 tbsp curry powder
  • 1/2 tsp cayenne pepper
  • Salt and pepper, to taste
  • 2 tbsp olive oil
  • Handful of fresh cilantro, chopped (for garnish)

  • Blender

Preparation:

Start by cutting the chicken thighs into bite-sized pieces and seasoning them with salt, pepper, and a tablespoon of curry powder. In a large skillet over medium heat, heat the olive oil and sauté the chicken until browned on all sides. Remove the chicken from the skillet and set it aside.

In the same skillet, add the chopped onion, minced garlic, and grated ginger. Sauté until fragrant and translucent. Then, add the remaining curry powder, cayenne pepper, and diced mango. Cook for a few minutes until the mango begins to soften.

Transfer the mango mixture to a blender and blend until smooth. Return the mixture to the skillet, add the coconut milk, and bring to a simmer. Add the cooked chicken back to the skillet and let it simmer gently for about 10-15 minutes, allowing the flavors to meld together.

Season with more salt and pepper if needed. Serve the mango coconut curry chicken over steamed rice or with naan bread. Garnish with chopped fresh cilantro for a burst of color and flavor.

Tip:

For an extra layer of richness, you can stir in a tablespoon of creamy peanut butter into the curry just before serving. It adds a nutty flavor that complements the sweetness of the mango beautifully.
