Today’s Unique Homemade Dessert: Earl Grey Lavender Crème Brûlée

As the weather cools down and the leaves start to change color, I find myself craving cozy desserts that warm both the body and soul. That’s why I’m excited to share my latest creation with you today – an Earl Grey Lavender Crème Brûlée. This creamy, floral dessert is the perfect way to elevate the classic crème brûlée with a unique twist.

Ingredients:

  • 300g heavy cream
  • 100g milk
  • 150g sugar
  • 3 earl grey tea bags
  • 1 tbsp dried lavender
  • 6 egg yolks
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • additional granulated sugar for caramelizing

Kitchen Tools:

  • saucepan
  • whisk
  • mixing bowl
  • ramekins
  • fine mesh strainer
  • blowtorch

To start, preheat the oven to 325°F (160°C). In a saucepan, combine the heavy cream, milk, sugar, earl grey tea bags, and dried lavender. Heat the mixture over medium heat until it starts to simmer. Remove from heat and let it steep for 15 minutes to infuse the flavors.

In a mixing bowl, whisk together the egg yolks, vanilla extract, and salt until well combined. Remove the tea bags and lavender from the cream mixture, then slowly pour the cream into the egg mixture while whisking constantly to prevent curdling.

Strain the mixture through a fine mesh strainer to remove any solids, then divide the mixture among ramekins. Place the ramekins in a baking dish and fill the dish with hot water to create a water bath for the crème brûlée. Bake in the preheated oven for 40-45 minutes, or until the edges are set but the center still jiggles slightly.

Remove from the oven and let the crème brûlée cool to room temperature, then refrigerate for at least 2 hours to set. When ready to serve, sprinkle a thin, even layer of granulated sugar over the top of each crème brûlée and caramelize with a blowtorch until golden and crispy.

This Earl Grey Lavender Crème Brûlée serves 6 and weighs approximately 900g in total. Each serving is approximately 150g and contains around 320 calories. A clever tip for this recipe is to let the lavender steep in the cream for longer for a more pronounced floral flavor.
