Hey there, foodies! Today, I’m excited to share a cozy and comforting recipe perfect for the crisp fall weather. I love making this creamy mushroom risotto on lazy Sundays when I just want to unwind and enjoy a delicious meal. It’s a dish that never fails to warm both my body and soul, and I hope it brings you the same joy!

Ingredients:

  • 200g Arborio rice
  • 250g mixed mushrooms (such as shiitake, cremini, and oyster)
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 120ml dry white wine
  • 1L vegetable broth, warmed
  • 50g grated Parmesan cheese
  • 2 tbsp butter
  • 2 tbsp olive oil
  • to taste

To start, heat the olive oil in a large skillet over medium heat. Add the chopped onion and garlic, sautéing until translucent and fragrant. Next, add in the Arborio rice and cook for a few minutes until lightly toasted.

Deglaze the pan with the white wine, stirring constantly until the liquid is absorbed. Begin adding the warmed vegetable broth, one ladle at a time, stirring frequently and allowing the rice to absorb the liquid before adding more. This process should take about 20-25 minutes, until the rice is creamy and tender.

While the risotto is cooking, in a separate saucepan, melt the butter and sauté the mixed mushrooms until they are golden brown and tender. Season with salt and pepper to taste.

Once the risotto is cooked to perfection, stir in the sautéed mushrooms, grated Parmesan cheese, and an extra knob of butter for richness. Adjust the seasoning with salt and pepper if needed.

Serve the creamy mushroom risotto hot, garnished with some additional grated Parmesan cheese and a drizzle of olive oil. Each spoonful is a comforting blend of earthy mushrooms, creamy rice, and umami Parmesan that will leave you craving more.
