This dish is a perfect marriage of savory umami flavors and creamy textures that will satisfy even the pickiest eaters.

For this recipe, you will need the following ingredients:

  • 2 Japanese eggplants, sliced
  • 3 tbsp miso paste
  • 2 tbsp maple syrup
  • 2 cloves of garlic, minced
  • 1 cup polenta
  • 4 cups vegetable broth
  • 2 tbsp butter

To prepare this dish, start by preheating the oven to 400°F (200°C). In a small bowl, mix together the miso paste, maple syrup, and minced garlic. Place the sliced eggplant on a lined baking sheet and brush the miso glaze over each slice. Roast the eggplant in the oven for 20-25 minutes, or until golden brown and tender.

In a saucepan, bring the vegetable broth to a boil. Slowly whisk in the polenta and reduce the heat to low. Cook the polenta for 15-20 minutes, stirring frequently, until it reaches a creamy consistency. Stir in the butter and season with salt and pepper.
