Ingredients:

  • 150g yellow cornmeal
  • 100g all-purpose flour
  • 10g baking powder
  • 5g baking soda
  • 5g salt
  • 250ml buttermilk
  • 2 eggs
  • 100g butter, melted
  • 100g crispy cooked bacon, crumbled
  • 2 medium apples, peeled and diced
  • 50g brown sugar

To begin, preheat your oven to 375°F (190°C) and place your cast iron skillet in the oven to heat up. In a mixing bowl, combine the yellow cornmeal, all-purpose flour, baking powder, baking soda, and salt. In a separate bowl, whisk together the buttermilk, eggs, and melted butter. Slowly pour the wet ingredients into the dry ingredients, mixing until just combined. Fold in the crumbled bacon.

Remove the hot skillet from the oven and add a tablespoon of butter, swirling it around to coat the bottom and sides. Spread the diced apples evenly in the skillet, sprinkle with brown sugar, then pour the batter over the top. Bake in the preheated oven for 25-30 minutes, or until the cornbread is golden brown and a toothpick inserted into the center comes out clean.

Once the cornbread is baked, allow it to cool slightly before slicing and serving. The combination of sweet caramelized apples, salty bacon, and tender cornbread is sure to impress your taste buds.
