Today, I am excited to share a cozy and comforting fall recipe that captures the essence of the season: Roasted Butternut Squash Risotto. The sweet and nutty flavor of butternut squash pairs perfectly with creamy risotto, creating a dish that is both hearty and elegant. This recipe is a great way to warm up on chilly autumn evenings or to impress guests at a dinner party.

Ingredients:

  • butternut squash (diced) – 500g
  • arborio rice – 300g
  • onion (finely chopped) – 1
  • garlic (minced) – 3 cloves
  • vegetable broth – 1 liter
  • white wine – 1 cup
  • butter – 50g
  • parmesan cheese (grated) – 100g
  • olive oil
  • salt and pepper

  • wooden spoon
  • grater

To start, preheat your oven to 400°F (200°C). Place the diced butternut squash on a baking sheet, drizzle with olive oil, season with salt and pepper, and roast in the oven for about 30 minutes, or until tender and slightly caramelized.

In a large saucepan, heat some olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until translucent. Add the arborio rice to the pan and toast it for a few minutes until slightly golden.

Deglaze the pan with white wine, stirring until the wine is absorbed. Begin adding the vegetable broth, one ladleful at a time, stirring constantly and allowing each addition to be absorbed before adding more.

Once the risotto is creamy and the rice is cooked al dente, stir in the roasted butternut squash, butter, and grated parmesan cheese. Season with salt and pepper to taste.

For an extra layer of flavor, try adding a sprinkle of toasted pine nuts or a drizzle of balsamic reduction before serving.
