Ingredients:

  • all-purpose flour (200g)
  • granulated sugar (100g)
  • unsalted butter, cold and cubed (150g)
  • salt (a pinch)
  • ice water (60ml)
  • apples, thinly sliced (3 medium)
  • cinnamon (1 tsp)
  • lemon zest (from 1 lemon)
  • brown sugar (50g)
  • egg, beaten (1)

  • parchment paper

To begin, preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper. In a mixing bowl, combine the flour, granulated sugar, and a pinch of salt. Add the cold, cubed butter to the dry ingredients and use a pastry cutter to work the butter into the flour until it resembles coarse crumbs. Gradually add the ice water, a little at a time, until the dough comes together. Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for 30 minutes.

While the dough chills, prepare the apples by tossing them with cinnamon, lemon zest, and brown sugar in a separate bowl. Once the dough has chilled, roll it out on a lightly floured surface into a rough circle. Transfer the dough to the prepared baking sheet.
