Today’s Recipe: Crunchy Avocado Brownies

As the weather starts to warm up, I find myself craving something sweet but still healthy to enjoy after dinner. That’s why today, I’m excited to share my recipe for Crunchy Avocado Brownies. These brownies are a unique twist on a classic dessert, using avocado to add a creamy texture and walnuts to add a satisfying crunch. Trust me, you’ll want to make these over and over again!

Ingredients:

  • 1 ripe avocado (about 200g)
  • 1/2 cup coconut sugar (100g)
  • 1/2 cup cocoa powder (60g)
  • 1/4 cup coconut flour (30g)
  • 1/2 cup chopped walnuts (50g)
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 2 tbsp melted coconut oil

Kitchen Tools:

  • 8×8 baking pan

To start, preheat your oven to 350°F (175°C) and line your baking pan with parchment paper. In a mixing bowl, mash the ripe avocado until smooth. Add in the coconut sugar, cocoa powder, coconut flour, baking powder, vanilla extract, salt, and melted coconut oil. Mix everything together until well combined. Fold in the chopped walnuts for that extra crunch.

Pour the batter into the prepared baking pan and spread it out evenly. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean. The brownies should be firm to the touch but still slightly soft in the center. Allow them to cool in the pan for a few minutes before transferring to a wire rack to cool completely.

Once cooled, slice the brownies into squares and serve. These Crunchy Avocado Brownies are best enjoyed fresh, but they can be stored in an airtight container at room temperature for up to 3 days.

The approximate total weight of the cooked dish is 500g, with 12 servings. Each serving is around 42g, and has an estimated calorie count of 150 per serving.
