Today’s Recipe: Cheesy Mushroom-Stuffed Chicken Breast

Hey there, foodies! Today, I’m excited to share my latest creation with you all. I was feeling inspired by the changing of the seasons and wanted to come up with a dish that combined some of my favorite ingredients in a unique and delicious way. So, I present to you my Cheesy Mushroom-Stuffed Chicken Breast recipe!

To make this dish, you’ll need the following ingredients:

  • chicken breast (200g)
  • button mushrooms (50g)
  • mozzarella cheese (30g)
  • spinach leaves (20g)
  • garlic cloves (2)
  • olive oil (15ml)
  • salt and pepper to taste

Before we get started, make sure you have the following kitchen tools on hand:

  • chef’s knife
  • cutting board
  • oven
  • frying pan
  • oven-safe baking dish

Start by preheating your oven to 375°F (190°C). Next, butterfly the chicken breast to create a pocket for the stuffing. Season the inside of the chicken breast with salt and pepper.

In a frying pan, heat the olive oil over medium heat. Add the minced garlic and sliced mushrooms, and sauté until the mushrooms are tender. Add in the spinach leaves and cook until wilted. Remove from heat and let it cool slightly.

Once the mushroom mixture has cooled, stuff it inside the chicken breast pocket. Place the stuffed chicken breast in an oven-safe baking dish and top it with sliced mozzarella cheese.

Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the cheese is bubbly and golden.

Once cooked, let the chicken breast rest for a few minutes before slicing it into thick, juicy portions. Serve hot and enjoy the oozy, cheesy goodness with a side of your favorite vegetables or salad.

In the end, this Cheesy Mushroom-Stuffed Chicken Breast dish weighs approximately 325g and serves 1 person, with each serving containing around 350 calories.

One clever tip for enhancing the flavors of this dish is to sprinkle some smoked paprika on top of the cheese before baking. It adds a subtle smokiness that complements the cheesy, earthy mushrooms perfectly.

I hope you give this recipe a try and make it your own by adding in your favorite herbs or spices. Happy cooking!
