Hey foodies! Today, I’m excited to share my heavenly Truffle Risotto recipe with you all. This luxurious dish is perfect for a cozy night in or a special dinner party. The earthy flavors of the truffle combined with the creamy risotto will transport your taste buds to paradise.

Ingredients:

  • 250g Arborio rice
  • 1 liter chicken broth
  • 200ml white wine
  • 2 shallots, finely chopped
  • 2 cloves of garlic, minced
  • 2 tbsp truffle oil
  • 100g grated Parmesan cheese
  • Handful of fresh parsley, chopped
  • Salt and pepper to taste

To start, heat the chicken broth in a saucepan over medium heat. In another saucepan, add a drizzle of olive oil and sauté the shallots and garlic until translucent. Add the Arborio rice to the pan and toast it for a few minutes until slightly translucent.

Next, pour in the white wine and let it simmer until it’s mostly absorbed by the rice. Begin adding the warm chicken broth one ladle at a time, stirring constantly until each ladle is absorbed before adding the next. This process will take about 20-25 minutes until the rice is creamy and al dente.

Once the risotto reaches the desired consistency, stir in the truffle oil, grated Parmesan cheese, and chopped parsley. Season with salt and pepper to taste. Serve the risotto hot, garnished with extra Parmesan cheese and a drizzle of truffle oil for an extra touch of luxury.

This Truffle Risotto recipe serves 4 people with approximately 400g per serving. Each serving is approximately 450 calories.
