Hi there, foodies! Today I’m excited to share a special recipe that holds a nostalgic place in my heart. As the weather cools down, I find comfort in a warm, creamy bowl of risotto. But this version with saffron-infused lobster takes it to a whole new level. It’s a luxurious dish perfect for a fancy dinner party or a cozy night in. So, let’s get cooking!

Ingredients:

  • Arborio rice (300g)
  • Lobster tails (4, about 400g)
  • Saffron threads (1/2 tsp)
  • White wine (1 cup)
  • Shallots (2, minced)
  • Garlic (2 cloves, minced)
  • Chicken stock (1 liter)
  • Parmesan cheese (100g, grated)
  • Butter (50g)
  • Olive oil
  • Salt and pepper
  • Fresh parsley (for garnish)

Start by cooking the lobster tails. In a large skillet, heat some olive oil over medium heat and add the lobster tails. Cook for about 5 minutes until they turn pink and opaque. Remove the lobster from the skillet, chop it into bite-sized pieces, and set it aside.

In a saucepan, heat the chicken stock until simmering, then add the saffron threads to infuse the liquid with their beautiful color and aroma. Keep the stock warm on low heat throughout the cooking process.

Next, in the same skillet used for the lobster, melt butter and olive oil. Add the minced shallots and garlic, sautéing until translucent and fragrant. Add the Arborio rice and toast it for a few minutes until it becomes slightly translucent.

Pour in the white wine and stir until it is completely absorbed by the rice. Begin adding the warm saffron-infused chicken stock, one ladle at a time, stirring constantly and letting each addition be absorbed before adding more.

Continue this process until the rice is creamy and al dente, about 18-20 minutes. Add the cooked lobster pieces and grated Parmesan cheese, stirring until everything is well combined. Season with salt and pepper to taste.

Serve the saffron-infused lobster risotto hot, garnished with fresh parsley for a pop of color and freshness.

This decadent dish weighs approximately 1200g after cooking and serves 4 people. Each serving is around 300g and contains roughly 550 calories.

Pro tip: For an extra layer of flavor, try adding a splash of brandy to the risotto just before serving. It will elevate the dish and impress your guests!
