Today’s Unique Creation: Saffron-infused Seafood Risotto

As the weather starts getting cooler, I find myself craving warm and comforting dishes that are both hearty and flavorful. That’s why today, I’m excited to share with you my latest culinary creation: saffron-infused seafood risotto. This dish is perfect for a cozy night in or a special dinner with loved ones.

Ingredients:

  • Arborio rice (300g)
  • Saffron threads (1g)
  • Shrimp, peeled and deveined (250g)
  • Scallops (200g)
  • White wine (150ml)
  • Fish stock (1L)
  • Parmesan cheese, grated (50g)
  • Butter (50g)
  • Garlic, minced (2 cloves)
  • Onion, finely chopped (1)
  • Olive oil (30ml)
  • Salt and pepper, to taste

To start, infuse the saffron threads in a small amount of warm fish stock to release their beautiful color and flavor. In a separate saucepan, heat olive oil and sauté the minced garlic and chopped onion until fragrant. Add the Arborio rice and stir to coat each grain with the aromatic mixture.

Pour in the white wine and let it simmer until absorbed. Begin adding the saffron-infused fish stock, one ladle at a time, stirring constantly until the rice is creamy and al dente. This process will take about 18-20 minutes.

In a separate sauté pan, heat some butter and cook the shrimp and scallops until they are cooked through and slightly caramelized. Season with salt and pepper before adding them to the risotto. Stir in the grated Parmesan cheese for added creaminess.

Once everything is well combined, give the risotto a final taste and adjust the seasoning if needed. Serve hot, garnished with a sprinkle of fresh herbs or extra Parmesan cheese.

This saffron-infused seafood risotto weighs approximately 1200g in total and serves 4 people. Each serving is around 300g and contains about 450 calories.

One unique tip for this dish is to add a splash of fresh lemon juice right before serving. The acidity will brighten up the flavors and bring a burst of freshness to each bite.
