As the warm days of summer start to fade into cozy evenings, I find myself craving a sweet treat that embodies the essence of sunshine and tropical flavors. Today, I’m excited to share my latest dessert creation: Golden Pineapple Creme Brulee. This silky smooth custard, infused with the brightness of fresh pineapple and topped with a caramelized sugar crust, is sure to transport your taste buds to paradise.

Ingredients:

  • 1 cup (150g) fresh pineapple, diced
  • 1 cup (240ml) heavy cream
  • 4 egg yolks
  • 1/2 cup (100g) granulated sugar
  • 1 tsp (5ml) vanilla extract
  • 1/4 cup (50g) brown sugar

Begin by preheating your oven to 325°F (160°C) and placing your diced fresh pineapple on a baking sheet. Roast the pineapple for 15-20 minutes until caramelized and fragrant. Set aside to cool.

In a saucepan, heat the heavy cream over medium heat until it just begins to simmer. Remove from heat and let it cool slightly. In a mixing bowl, whisk together the egg yolks, granulated sugar, and vanilla extract until smooth. Gradually pour the warm cream into the egg mixture, whisking constantly to combine.

Divide the roasted pineapple between four ramekins, then pour the custard mixture over the top. Place the ramekins in a baking dish and fill the dish with hot water halfway up the sides of the ramekins. Bake for 30-35 minutes, or until the custards are set but still slightly jiggly in the center.

Remove the ramekins from the water bath and let them cool to room temperature. Refrigerate for at least 2 hours to chill and set. Just before serving, sprinkle a thin, even layer of brown sugar over each custard. Caramelize the sugar using a kitchen torch until golden and crunchy.

The total weight of the cooked dish is approximately 680g, and this recipe yields 4 servings. Each serving weighs around 170g, with an estimated calorie count of 320 per portion.

For a unique twist on this classic dessert, try adding a pinch of ground cinnamon to the custard mixture before baking. The subtle warmth of cinnamon pairs beautifully with the sweet pineapple and adds a cozy touch to this tropical treat.
