Indulge in Rich and Aromatic Mushroom Risotto: The Perfect Plant

Aromatic Mushroom Risotto

Today, I’m excited to share with you one of my favorite plant-based recipes that is perfect for cozy evenings at home. This aromatic mushroom risotto is packed full of rich, earthy flavors that will warm you up from the inside out.

Ingredients:

  • Arborio rice (300g)
  • Mixed mushrooms (such as shiitake, oyster, and cremini) (400g)
  • Onion (1, finely chopped)
  • Garlic cloves (3, minced)
  • Vegetable broth (1 liter)
  • White wine (150ml)
  • Fresh thyme leaves (1 tbsp)
  • Nutritional yeast (2 tbsp)
  • Salt and pepper to taste
  • Olive oil for cooking

Kitchen Tools:

  • wooden spoon
  • grater

Start by heating a splash of olive oil in a large saucepan over medium heat. Add the chopped onion and garlic, cooking until softened and fragrant. Next, add the Arborio rice to the pan, stirring well to ensure each grain is coated in the oil.

Pour in the white wine and allow it to simmer until mostly absorbed by the rice. Begin adding the vegetable broth, one ladleful at a time, stirring constantly and allowing each addition to be absorbed before adding more. This process should take around 20-25 minutes, resulting in a creamy and tender risotto.

In a separate pan, sauté the mixed mushrooms in a bit of olive oil until golden brown and tender. Season with salt, pepper, and fresh thyme leaves. Once the risotto is cooked to your desired consistency, stir in the nutritional yeast for a cheesy, umami flavor.

Serve the mushroom risotto in bowls topped with the sautéed mushrooms. Garnish with a sprinkle of extra thyme leaves and a drizzle of olive oil. Enjoy the comforting aromas and flavors of this hearty dish.
