Today, I’m sharing a unique twist on a classic dessert that’s perfect for summer evenings. This blackberry rosemary panna cotta is a sophisticated and elegant treat that will wow your taste buds with its unexpected combination of flavors.

Ingredients:

  • 200g fresh blackberries
  • 1 sprig of fresh rosemary
  • 10g gelatin
  • 100g sugar
  • 500ml heavy cream

Kitchen Tools:

  • saucepan
  • blender
  • strainer
  • ramekins

To start, heat the cream in a saucepan over low heat. Add the sugar and stir until dissolved. Meanwhile, bloom the gelatin in cold water according to package instructions. Once the cream is warm, remove from heat and add the bloomed gelatin, stirring until fully dissolved.

Next, blend the blackberries in a blender until smooth. Strain the puree through a fine-mesh strainer to remove the seeds. Finely chop the fresh rosemary and mix it into the strained blackberry puree. Stir the blackberry mixture into the cream mixture until well combined.

Divide the mixture into ramekins and refrigerate for at least 4 hours, or until set.

When ready to serve, run a knife around the edge of each ramekin and invert onto a plate to unmold. Garnish with fresh blackberries and a sprig of rosemary for an elegant touch.

This recipe serves 6 and each serving weighs approximately 150g. One serving of this creamy, fruity panna cotta is around 300 calories.

Clever Tip:

For an extra burst of flavor, infuse the cream with the rosemary sprig before adding the gelatin for a more intense rosemary taste.
